Graham County Cooperative Extension gave demonstrations of green chile preparation and canning Oct. 18 and 19 at Eastern Arizona College in the Gila/Galiuro room. Participants learned how to make crunchy chile rellenos and green chile stew and how to can green chiles.
"My recipe (for green chile pork stew) is one I learned from my mother-in-law, plus a few little tweaks I've made over the years," said presenter Claudia Rios.
The Graham County Cooperative Extension is part of an outreach program through the University of Arizona and the College of Life Sciences, whose mission is to engage community members and provide education opportunities that improve lives, families, communities and the environment throughout this state.
Locally, classes are offered every month as part of a program called "How we live in Graham County." Eastern Arizona College is often the site for the demonstrations, and themes are geared around in-season foods and upcoming holidays. For example, next month's class will be centered around Christmas, cookies, decorations and other holiday fun.
Each participant is asked to pay a small fee, just enough to cover the cost of supplies, and the presenters are usually community members who have volunteered to share their knowledge and experience with fellow Gila Valley residents.
